I worked at a Pizza Hut in high school.
We once had a staff meeting and the GM asked if anyone knew why we served our guests the first slice when we set their pizza on the table. And a couple things about that....
I didn't know that was a thing we were supposed to do.
I didn't care... I was 16 and just wanted to take a break to skateboard in the parking lot
NOBODY knew the answer. We sat through him staring us down for 15 minutes while we guessed. And I feel like that's just poor management on his part. So, do better Jeff!

Anyway,
my kids school is doing a fundraiser where you buy a card for $20 and in return you get unlimited buy one, get one pizzas from Dominos through the end of June 2027.
It's a good deal, and you should do it. This is my first first foray into competitive school fundraising and I want to show up the other parents! Someone's already sold 60. I feel that as a community, we can do better.

Tomorrow we'll start putting out our specials for the weekend, but before that happens you should know about the Passport Crawl.

Come to the Scotch Pines plaza on Saturday from 10 to 2 and visit all of the businesses on the passport to get a stamp. When you fill out your card you'll be entered in a raffle. Each business will have something special happening. For ourselves, we're doing double punches on your Pork Patron Purchasing Program loyalty card.... so stop leaving them at home. This is why God invented wallets.

I was going to wait for the newsletter but I feel we need to talk about this now.
I don't have ANYTHING in my shop that isn't raised here in the states. There is NO weird, questionable Argentinian beef in my shop.

We sell more ribeyes than are on 1 cow. We sell more sirloins than what's on one cow. And we sell more ground beef each week than what's on 2 cows. Point is, we buy beef from a few different sources to keep you all fed. So here's where that comes from, so you don't have to stress about it:

Whole Animal Beef: This comes from Running Creek Ranch in Elizabeth. We have used them since the dawn of time... or this shop. It's fantastic Limousin beef raised and slaughtered here in Colorado. If you get a 1/4 or 1/2 cow from us, this is what you get. When we don't sell those, it goes into our case.

Box Beef: The beef market is so consolidated that I have to go through a wholesaler to find high quality beef to keep our cases stocked. But, I still have control over where that comes from and the quality of what I buy. We have 3 main sources, St. Helens, Double R Ranch (both in the Oregon/Washington areas) and Creekstone (Nebraska/Iowa)

For starters all our beef is certified through the Certified Humane Program. To earn this certification, the beef processor’s program has been examined closely through a series of stringent audits to ensure the animals are calm, relaxed and well cared for throughout their entire lives.
• Cattle prods, cages, crates and tie stalls are strictly prohibited.
• The animals are free to roam and live according to their natural behavior.
• The cattle graze on pastureland and are finished with high-quality, corn-based feed.
• No animal byproducts, antibiotics or growth hormones are ever allowed.

Second: All box beef is Black Angus:
• USDA Prime and Choice beef
• No antibiotics, added hormones, growth promotants or artificial ingredients ever — fed a 100% vegetarian diet.
• CERTIFIED HUMANE® animal-handling practices

And these are the ranches we use:
Double R Ranch
The Double R Ranch itself sits on 80,000 acres in the Okanogan region of Washington State. The mild climate, open spaces, and the abundance of natural resources in the Pacific Northwest provide for cattle health and comfort. Additionally, the temperate climate increases access to a diverse range of sustainable feed ingredients, including wheat, corn, barley, potatoes, and hay.

Creekstone Farms
They’ve cultivated relationships with family ranchers and farmers who diligently develop their herds for naturally superior genetics, refine feeding techniques and perfect their animal-handling practices. All animals sourced by Creekstone Farms are born and raised in the U.S.A. Hand-selected cattle and strict genetic specifications produces consistent, quality products.

St. Helen’s Beef
The Northwest’s mild weather, scenic landscape, and abundance of natural resources offer prime cattle-raising conditions. With a wealth of wheat, corn, hay and potatoes, nearly all necessary components of sustainable cattle feed can be found right there.

I hope this helps your peace of mind. It's just fu***ng stupid that Trump's administration has gutted the protections that would prevent dangerous and possibly deadly imported beef into the country, and that doesn't even begin to address the economic impact to local ranchers. But all that will be in the newsletter... it's gonna be a 2 wh***ey newsletter. (I've started ranking them by how many glasses of wh***ey I drink while I'm writing them. I don't know what the top end of that ranking is, but you'll know when I get close... the run on sentences, spelling errors, and confusing proverbs... don't cross the road if you can't get out of the kitchen!)

...and I said "dehydrator, I hardly even know her!"

For the ...like 17 of you that come into the shop each week and bemoan that we don't have any jerky, then walk out, I'm trying. This is our new dehydrator so we can make more. Not that doesn't mean that you animals won't keep buying us out, but I'm trying.

If your bacon is a little smokier than normal... this is why.

Sometimes you have to work out a few kinks with a new smoker, like how not to burn your butcher shop down.

Fret not! We got it under control and saved... most of the bacon.

Community Cue is the Pro-Am BBQ competition we created with Old Town Spice Shop. We pair up backyard BBQ enthusiasts with professional chefs so we can showcase what you cook in your own backyard. It's the ultimate sausage measuring competition, actually the only public one I know about.
