VANILLA DUTCH BABY!

A simple beignet like recipe. Easy like Sunday morning.

Ingredients
3 tablespoons butter
3 eggs
3/4 cup all-purpose flour
3/4 cup milk, heated 20 to 30 seconds in the microwave
1 tablespoon sugar
2 teaspoons pure vanilla extract
Pinch salt
Powdered sugar, for dusting

Directions

Preheat the oven to 400 degrees F.
Put the butter in a large, ovenproof, nonstick saute pan and place in the oven.
Meanwhile, in a blender, combine the eggs, flour, warm milk, sugar, vanilla extract and pinch of salt, and blend on medium-high speed until uniform. (If mixing by hand, combine the eggs with the milk until the mixture is light yellow and no longer stringy, about 1 minute. Add the flour, sugar, vanilla, and pinch of salt, and whisk vigorously to remove the lumps, about 30 seconds.)
Carefully remove the hot pan from the oven. The butter should be melted. Swirl the butter around the pan to coat completely, and then pour the remaining butter into the batter and pulse to blend. Pour the batter into the hot pan and return the pan to the oven. Cook until the pancake is puffed in the center and golden brown along the edges, 20 to 25 minutes.
Using a spatula, remove the entire Dutch baby from the pan and place on a cooling rack for a few minutes to allow the steam to escape without condensing along the bottom and rendering the pancake soggy. Dust with confectioners' sugar when cooled slightly. Slice the pancake into 8 wedges on a serving platter or cutting board.

Serve with a drizzle of syrup. I'm digging Bourbon Syrups these days!

The recipe is EASY!

Step one- buy a rotisserie chicken
Step two- eat said chicken
Step three- Add chicken carcass, two tablespoons apple cider vinegar to crock pot. Fill with water to cover the chicken bones. Toss in some carrots, garlic, onions and any other spare veggies around the house. Set crock pot on low for 10 hours. Run it for another 10 on low!! Then strain out the broth and it's ready to go! I just grab all my spare Tupperware and fill my freezer. I use the broth for cooking, drinking and it's awesome!!!!!

HAPPY FOURTH MINI CORNDOGGS!

Ingredients

40 wooden toothpicks
1 package (16 oz) cocktail wieners (about 40 pieces)
1 can (12 oz) refrigerated flaky biscuits (10 biscuits)
1 egg, beaten
1 tablespoon milk
1/2 cup cornmeal
1 tablespoon sugar
3/4 cup ketchup
3/4 cup yellow mustard

Directions

1 Heat oven to 400°F. Grease cookie sheet with shortening or spray with cooking spray. Insert toothpick into narrow end of each wiener. Separate dough into 10 biscuits; carefully divide each biscuit horizontally into 4 rounds. Wrap sides and top of each wiener with dough round, pinching edges to seal.
2 In pie plate, mix egg and milk. On a plate, mix cornmeal and sugar. Roll each wrapped wiener in egg mixture, then roll lightly in cornmeal mixture. Place seam side down on cookie sheet.
3 Bake 10 to 12 minutes or until tops are light golden brown and bottoms are golden brown. Remove from cookie sheet with spatula. Serve with ketchup and mustard.

Summer Sundays call for lovely Sangria

So easy!

Bottle of red wine
Tons of citrus fruit
Big splash of Triple sec
Big splash of Brandy
1/4 c sugar
Big splash of OJ

Chill & top with club soda or Champagne!!!!

So simple, light and refreshing!!
