Fresh and Flavorful Grilled Salmon Salad
Ingredients:
2 salmon fillets
2 tablespoons olive oil
Salt and pepper to taste
1 lemon, sliced
6 cups mixed greens (arugula, spinach, and romaine)
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1 avocado, sliced
1/4 cup feta cheese, crumbled
2 tablespoons chopped fresh dill
Dressing:
1/4 cup olive oil
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey
Salt and pepper to taste
Directions:
Preheat grill to medium-high heat. Brush salmon fillets with olive oil and season with salt and pepper.
Place lemon slices on the grill and lay the salmon fillets on top of the lemon slices. Grill for 4-5 minutes per side, or until the salmon is cooked through and has grill marks. Remove from grill and let rest.
In a large bowl, combine mixed greens, cherry tomatoes, red onion, avocado, and feta cheese.
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper to make the dressing.
Flake the grilled salmon into large pieces and add to the salad.
Drizzle the dressing over the salad and toss gently to combine.
Garnish with fresh dill before serving.
