Tonight's dinner will be so yummy. Meatballs and spaghetti squash. I am following a no carb program but dying for spaghetti and meatballs. Pasta is out so squash it is.

The meatballs are easy peasy. Always good tasting and tender and full of flavor.

1 1/2 lbs. ground beef
1/2 cup of onion, finely chopped
1/2 cup panko....love panko
minced garlic
1 egg
1/2 cup of parmesan cheese...grated
2 tbs. of ketchup...extra moist
1 tsp salt and 1/2 tsp pepper
1 tbs. of parsley

Spray a large sheet pan or use parchment paper
Mix together everything except meat.
Use your hands, just like meatloaf it is easier.
Add beef and fold in gently to the rest of the mixture.
Form 1 1/2 inch balls, place on sheet pan in a 350 degree oven.
Bake until browned and cooked through.

Spaghetti Squash is super easy.

I put a medium squash in the microwave for 10 minutes. Cut the roast in oven at 425 degrees for 20 minutes or until soft. Take out seeds and then pile squash in a deep bowl. Add your favorite sauce and top with the meatballs and a sprinkling of parmesan cheese.

Your family will love this....and that is what is for dinner tonight.

Hope all is well with everyone. Another week of meals coming up. I am trying my hand on these little muffins today. Recipe is from My friend Isa. I made them last week and put too many blueberries in each muffin well and they came out soaking in blueberry juice. Today I will be using strawberries that I have chopped up and added to the mix.

Easy Muffins:

2 bananas
4 eggs
fresh or frozen fruit

1)Crush the bananas with a fork. Mash them really well until mushy.
2)Add the eggs and combine with the mashed bananas. Lightly grease the muffin tray. (I use the small muffin trays). Line the bottom of muffin cup with strawberries.
3)Place in a pre-heated oven for 12 minutes at 390 degrees.
4)once golden brown, they are finished. Enjoy.

This time around I will use just a couple of pieces of fruit per cup.

These are delish...no flour, gluten free.

Hello All. I know I have not posted in a very long time. I am trying to change that and post a couple of times per week. Yesterday I bought a large package of chicken thighs to enjoy for dinner one night this week. I split the package and freeze half.

My cousin Carol made her Mom's chicken recipe using french dressing and apricots. My hubby loved it, so this is what I will make this week.

1 cup french dressing
1 envelope of onion soup mix or homemade onion soup mix
6 oz of apricot preserves
1 can of whole apricots for topping (sliced)

Mix together, spread on chicken, slice apricots and spread on top of chicken pieces. Bake for 25 minutes in a 400
degree oven. Yummy. I will serve this with a side of green beans with roasted mushrooms and roasted potatoes.

Make your own onion soup mix.

3/4 cup Dried Minced Onion
1/3 cup Beef Bouillon Powder
4 tsp Onion Powder
1/4 tsp Celery Salt
1/4 tsp Paprika
1/4 tsp Black Pepper
1/4 tsp Parsley Flakes
1/4 tsp Sugar

Mix all ingredients and store a cool dry cabinet.

This is an easy dinner that the family will enjoy.

I love cannellini beans. They offer a creamy twist to any salad or savory dish. Try this recipe. Low in fat, high in fiber.
Delish...

Tuna Fagioli

1 can solid white albacore tuna
1 can cannellini beans: rinsed and drained
1 small red onion, sliced thin
1 T red wine vinegar
2 T olive oil
1 T lemon or 1/2 lemon fresh
1 clove garlic
handful of parsley
S/P
grape tomatoes-halved

Mix all ingredients together. Add tomatoes when you go to eat.

Great lunch or a very tasty dinner

Super Bowl is here. Make a great dinner in the crock pot in the morning so that it is done by game time. My menu is ribs in the crock and baked chicken wings. The ribs will fall off the bone and the wings will be juicy and tasty. Let's go Broncos!
