Blueberry Banana Pancakes
2 servings
Ingredients
1/4 cup coconut flower
1/4 tsp baking soda
2 tbsp fresh almond butter
2 eggs
1/2 tbsp unfiltered raw organic honey
1 small banana
1/4 cup unsweetened cashew milk (unsweetened vanilla almond milk works too)
2/3 cup blueberries
I had to add a little extra honey and cashew milk to the recipe since coconut flower varies. It does not cook like a regular pancake either. They were good but weird texture so I will be tweaking a bit more. 1/2 the recipe is about 250 calories or less. I through an over easy egg on top which made a great addition.
