Yesterday I made collard noodles! Cut out the big stem and stack the leaves. Roll them up tightly. Slice through to make noodles. Heat an inch of salted water in a frying pan. Blanch the collard noodles for a couple of minutes until bright green and tender. Drain well and fluff them up to serve. I used 6 big leaves and it made enough collard pasta for 2 servings.

I ate mine with beef stroganoff and it was delicious!

Some lovely muddy potatoes. We are trying to access some more planting areas, but as you can see there is semi-permanent standing water. More rain coming to add to the puddles :( Even the raised beds in this area are soggy - not raised enough, I guess!

Swiss chard and green spring garlic will be in Monday's Sunshine for Dinner veggie bag! :)

Swiss chard, red quinoa, and green spring garlic - a delicious combination. Coarsely chop the green garlic and chard, rinse 1 cup quinoa, and toss it all together with a little olive oil in a pan heated to medium. Add 2 cups of water and cover. Turn heat to low and simmer 15 mins, stir and see if all the water is absorbed and the quinoa is tender. Cool a few more minutes of water is not completely absorbed. Add salt to taste. Enjoy! For dinner tonight, I served this with a pan fried pork chop from Jerry's General Store.

Remember this? That was only three weeks ago.

Then they spent a goodly number of days under water :(

Now that it has been 85 degrees for a few days - the carrots are like, "Whatever! we are done!"

The ends are falling off - tiny feeder roots sprouting everywhere - foliage bunching up and preparing to go to seed. This is it for carrots! The last week, I think.

Carrots, onions, and beets in the snow, celery is growing nicely in the hoop house, and the view if you look up. Thank goodness for the sunshine - the snow and ice are melting fast off the hoop house and sliding off, and it is letting in more light all the time. It has been a dark winter so far. We need some sunshine!

The entire broccoli crop so far - devoured on a snowy day. Hope we start seeing some more buds forming. We are impatient...
