You can tell a lot about people from what they keep making long after the reason they started is gone. The German families who settled the Hill Country in the 1840s made sausage to preserve meat, head cheese because nothing was wasted, and smoked what they had because refrigeration was a century away. The reasons were practical. The craft they built around them was not, and it's still here, made the same way in Fredericksburg since 1947.
