Dry Dock Fish Company Here at Dry Dock, we seek and support fisheries that utilize environmentally conscious standards of Dry Dock Fish Company was started by Mark Lewis in 1986.

Born in Marseille, France, Mark grew up in Casablanca, Morocco, where he and his friends would enjoy fishing the rivers. When Mark came to the United States in 1968, he found that exceptionally fresh fish, that he was accustomed to, was difficult to come by. He founded Dry Dock Fish Company in 1986 with a mission to provide and outstanding selection of the highest quality fresh seafood available.

Dry Dock Fish Company has been a family operated business ever since and you can still find Mark in our Fullerton store or selling at one of our farmers market stands today. Today, Dry Dock Fish Company provides the freshest seafood to a few select Gourmet Restaurants and wide variety of farmers market customers all over Southern California from San Diego to Calabasas. Our fresh fish is cut daily and every cut is inspected to ensure the highest quality.

Ginger Miso Marinated Black Cod

Ingredients
• 4 (4-oz) pieces of black cod
• 2 tbsp mirin
• 2 tbsp cooking sake
• 2 tbsp white miso paste
• 1 tbsp fresh ginger, grated
• 2 cloves garlic, grated

Instructions
1. In a small bowl, whisk together the miso, mirin, and sake until smooth. Stir in the grated ginger and garlic.
2. Place the black cod fillets in a shallow container or resealable bag. Pour the miso marinade over the fish, making sure all surfaces are evenly coated.
3. Cover and refrigerate for at least 24 hours, up to 48 hours for deeper flavor.
4. When ready to cook, preheat the broiler on high and line a baking sheet with parchment paper.
5. Remove the fish from the marinade and gently wipe off the excess with your fingers or paper towels (no need to rinse).
6. Place the fillets on the prepared baking sheet and broil for 10-12 minutes, until the tops are golden brown and the fish flakes easily with a fork.
7. Serve hot with rice and your favorite sides. I severed with forbidden rice, roasted cabbage/carrots, and avocado.
