Do you ever wonder what to make with your radish greens? Radish Compound Butter is AMAZING on crackers or added to homemade croutons!
The compound butter is a terrific way to enjoy the greens AND it freezes well too. (Such a delight in the middle of winter)
RADISH GREENS COMPOUND BUTTER
4 cups loosely packed radish leaves
6 Tbsp salted butter at room temperature
1 small clove of garlic, peeled and chopped. (Substitute a garlic scape if you can!)
Freshly ground black pepper to taste
1. Bring a small pot of water to a boil. Fill a medium bowl with very cold water and ice cubes, and have a mesh strainer handy.
2. Add the radish leaves to the boiling water and leave them in the water until the leaves are wilted, about 12 seconds. Drain the leaves in the strainer and immediately plunge them into the ice water, which fixes the vivid green color. Once cool, remove the radish leaves and squeeze them as hard as you can to remove any excess water.
3. In a food processor or blender, combine the radish leaves, butter, garlic (or garlic scape), salt, and freshly ground black pepper. Process until the leaves are completely incorporated into the butter.
4. Serve at room temperature with sliced fresh radishes and assorted crackers. Store in the refrigerator or freezer.
5. To make homemade croutons, cube your leftover bread and toss with a generous amount of melted radish compound butter. Slow-toast the bread cubes until they're crunchy and serve in your favorite salad.
