Buttered sweet potato, cheese, brisket (Galesburg of course), chipotle crema, chopped bacon (Galesburg again), green onions. The brisket was roasted for 4 and a half hours, covered with guajillo chili, garlic, allspice, cider vinegar, cumin, chili powder, paprika etc etc etc. Insanity!

Mark went in back and cut these for me, St Louis spare ribs, two slabs. Dry rub & sauce made two days ago. :)

Meat shield! It's going to get slow roasted in homemade adobo sauce, which is in turn going into an interpretation of the "Hot Mess", a brisket-stuffed sweet potato topped with cheese, bacon (Galesburg of course), chipotle sour cream and green onions. But first up: ribs. Pics to follow.
