Planted some perennial plants today to add to the permaculture Garden!

We planted hyssop, Siberian pea shrub as well as more sunchokes.

In the raised garden bed we did lettuces, Siberian kale, carrots, spinach, beans etc etc ..

Added some strawberries into the raised bed with the purple asparagus....

This is a special blessing! After purchasing our farm August of 2024 we found out that we had a dry well. Our well would only pump less than 10 gallons per hour! Which means that you don't flush unless you have to, you take turns taking showers and you shut the water off in the middle, you hoard water in water catchment containers, water the garden with 5 gallon buckets, had to lug water in 5 gallon buckets to feed all the animals, could only do laundry or wash dishes not both, plus so much more ..... it's been a long while but we finally got water right before Christmas 2025.

The sellers lied on their selling disclosure and said that the well worked perfectly fine! We found out after we moved in that was a lie! Even the well digger that we used said that he was out here in 2023 of March and that the well was deemed dry.

God does not like ugly!

The gardening will be a game changer this year!

Sunchokes also known as Jerusalem Artichokes and yes… some folks call them Fartichokes for a reason

These knobby little roots are native to North America and part of the sunflower family. Long before grocery stores, Native Americans relied on them as a staple food because they grow easy, survive tough conditions, and keep producing year after year

The “fart” reputation comes from something called inulin. It is a fiber your body has to ferment instead of digest. That fermentation can get… lively. The trick to enjoying them without the side effects is simple
1️⃣ Cook them well instead of eating raw
2️⃣ Start with small amounts
3️⃣ Add an acid like vinegar or lemon juice when cooking
4️⃣ Ferment or pickle them which helps break down that inulin

Now here is a way you might actually fall in love with them

Simple Pickled Sunchokes
Wash and slice thin
Bring to a boil 1 cup vinegar 1 cup water 1 tablespoon salt 1 tablespoon sugar garlic and peppercorns
Pour hot brine over the sliced sunchokes in a jar
Let cool and refrigerate 24 to 48 hours

They come out crisp tangy and way easier on the stomach. Great on sandwiches or straight out of the jar

Just remember… plant them once and you will have them forever. They spread like family stories at Thanksgiving
