Walnut Maple Roasted Sweet Potatoes 🍠🍁🌰
Ingredients:
- 3 medium sweet potatoes 🍠
- 1/3 cup melted unsalted butter 🧈
- 1 teaspoon cinnamon 🌿
- 1/2 teaspoon salt 🧂
- 1/2 teaspoon pepper 🌶
- 1/3 cup maple syrup (+ 2 tablespoons) 🍁
- 1/3 cup chopped walnuts 🌰
- 1 teaspoon thyme 🌿
- 1/2 teaspoon cinnamon 🌿
Instructions:
1. Wash the sweet potatoes and slice them into 1/2-inch thick rounds. You can peel them or leave the skin on, as you prefer 🍠🔪.
2. Preheat the oven to 400°F (200°C) 🔥.
3. Toss the sweet potato slices with melted butter, cinnamon, salt, and pepper. Mix well using a spatula, your hands, or by shaking everything in a ziplock bag 🌀.
4. Arrange the slices in a single layer on a baking tray, leaving space between each piece to avoid steaming. Bake for 25-30 minutes 🍠🔥.
5. Check if the sweet potatoes are fork-tender when the baking time is up. Adjust as needed based on their thickness ⏳.
6. Combine maple syrup, walnuts, cinnamon, and thyme in a small bowl 🌰🍁.
7. Remove the sweet potatoes from the oven and top each slice with about 1 teaspoon of the walnut-maple mixture 🍁🌰.
8. Return to the oven and bake for an additional 8-10 minutes 🔥.
9. Serve warm and, if desired, sprinkle some feta on top for an extra flavor kick 🧀.
