Smoky Chipotle Southwest Taco Platter
oh my, this couldn’t be more perfect and easy to make; it's super fun for hosting and sharing!
1 bottle Appalachian Naturals Chipotle Ranch Salad Dressing
1 lb. ground beef
1/2c diced purple onion
1 avocado-diced
1c sliced sungold tomatoes
1 1/2c shredded cheese
1/2 c black beans (rinsed/drained)
2c crushed tortilla chips
2 tsp ground cumin
2 cloves garlic-minced
2 TBS avocado oil
2 limes
6 sprigs cilantro
Arrangement: In a large skillet sauté garlic and avocado oil until brown. Add ground beef and cumin, sauté until brown, drain excess fat. Arrange each ingredient on a platter: diced onion, tortilla chips, diced avocado, shredded cheese, sliced tomatoes, black beans, and lastly, ground beef. Drizzle Chipotle Ranch sauce over all of the ingredients. Serve with sides of lime wedges, extra Chipotle Ranch, sliced tomato, and extra chips. Vegetarian version-substitute with ground tempeh, quinoa, or eggs. Buen Provecho!
