Pan-seared duck breast, scallop & arugula salad, pan fried potatoes, caramelized peach half with a canel of herbed goat cheese.
I used the cold pan method with the duck breast and had great results in regards to the skin. While it was resting, I did the potatoes, then scallops, then the peach half in the same pan the duck rendered off on.
I also poked holes and zapped the potato for a few min as a means of parboiling them and the results were good enough I’m gonna try that approach with some other potato dishes.

Roast Asparagus
And ZERO SALT

Chef Mike was at it again today and check out this gorgeous and absolutely delicious creation!

We call it Bals-Out Baguette. That's right. You heard.

🥖 Toasted Rustic Baguette - 10 min @ 350

🧀 Spread Herb-Garlic Goat Cheese on top

🍄 Sauté (6) crimini shrooms and (6) king oysters in olive oil

🧂 Sprinkle your favorite season salt

🌱 Add Spring Mix until just wilted

🔥 Turn off heat

🧀 Toss mix with 1 tbsp of goat chees until just melted

🥄 Drizzle your favorite Balsamic Glaze on top...
...and VOILA...mouthwatering 🤤🤤 meal for two!

Most ingredients were found at Martha's Vineyard. (Holla!)
