You can call any meat processor in the state and find out that they are booked well into 2023. We ourselves have a long waiting list of folks that want to get their animals in and butchered. When someone doesn't show up for their scheduled appointment, not only does that rob someone else the chance of getting their animals processed it also hurts our plant! We still have to pay the kill floor person to be here and for sitting around waiting for that person to show. These no call/ no shows have happened far too many times. I didn't want to do this but I am forced to do as all the other plants are doing and charge a deposit up front when you schedule an animal. If you are a no call/ no show, this deposit will be nonrefundable. We need a weeks notice to cancel, so that we have time to schedule someone in your place. Our deposits are as follows:
Cows $200
Hogs $100
Sheep/Goats $50

These will go towards your final bill. Anyone already on our books are grandfathered in and no deposit is needed.

BACON CRACK!
1 1/2 sleeves saltine crackers
1 1/4 cups unsalted butter
1 1/4 cup light brown sugar
1 lb Bacon
Preheat oven to 400. Line a greased or sprayed rimmed baking sheet and cover with foil or parchment so that it also comes up the sides.

Chop bacon into bits and fry until crispy.

Put down a single layer of crackers on pan.

In a saucepan, add brown sugar and butter and heat until melted and begins to boil then stir and continue boiling for 3 minutes.

Pour the mixture carefully over the crackers and place in the oven for 5 minutes.

Remove from oven and sprinkle bacon all over. Allow to cool then break into pieces.

We can also get you a farm raised hog from a local farmer for freezer meat. You will know where your meat came from and what it was fed. You end up paying less than if you were to buy all the same cuts from your grocery store.
