Our ducks are giving us more eggs than we can sell! And for the uninitiated, duck eggs are not only delicious and tastes like a chicken egg with a little more flavor, they are very good for you! I use duck eggs all the time when recipes call for eggs and find they make my quiches, French toast, muffins, cakes and breads a little richer in flavor due to the larger egg yolk.
Although duck eggs may be considered an "exotic egg" which is why you won't see them in the grocery stores, there is nothing funny or different about the taste or texture. They have more nutrients than a chicken egg with Omega-3 fatty acids, Vitamin A, Vitamin D, folate, and iron. They also have more protein than a chicken egg! And the reason they cost more is availability--although ducks can lay as many (or more!) eggs as a chicken, they are not used commercially as a grocery store item.
Walk on the wild side this Saturday and pick up your half-dozen duck eggs! For $2, you can't go wrong. And if you find you don't like them (it's in your head) toss to your dog--they will thank you for it!
