📢 A Note From Sir Loin Meat Co.

Good question we've been getting — why does the website only show bundles and boxes, no single cuts?

Here's the answer: we built it that way on purpose, so you're getting a good spread for your money instead of just one item.

Single cuts just aren't set up to sell online yet.

If you want one specific cut, your best bet is coming into the shop.

We keep the full selection of fresh frozen cuts in store, but they go quick. We've been changing up our processing and restock schedule lately, so when a cut sells out, it does not take a minute before the next batch is ready.

We do put some single cuts up online here and there too, just not on a regular schedule yet — still working that part out as we restructure some things.

For me, it's oxtail. My mother could turn a pot of oxtail into something that made the whole house smell like Sunday couldn't come fast enough.

Here's why.

You've been hearing about the New World screwworm outbreak in Texas, and you may have also heard some alarming things about beef safety. We want to address that directly.

Screwworm is a serious threat to cattle — it is a parasite that attacks living animals through open wounds. It is not a food contaminant.

✅ The USDA has stated clearly that screwworms do not infest meat or food products. Every animal that comes through a USDA-inspected processing facility is reviewed by federal inspectors before it moves into commerce.

An infested animal does not pass. It does not get processed. It does not reach our cases.

We work closely with our processors. We know the facilities. We know the inspection process.

🔎 That system exists for exactly this kind of situation — and it is working.

The outbreak is real and it matters — for cattle producers, for the national herd, and for beef prices down the road. It deserves honest attention. What it does not deserve is consumer panic based on misinformation.
