is saying it’s American Cheese Month so we thought we would post a photo of our to join in the celebration.
In production now for 13 years and our second cheese released under the Mystic Cheese brand (the first was Melville) Mindy is a Robiola themed Bloomy Rind modeled after cheeses you’ll find being made in Piemonte Italy where our cheese maker learned to make cheese over 24 years ago.
Production started in 75 gallon batches in our Cheese Pod shipping container. The first little squares were packed into coolers and driven to in a Honda Element braving the NY traffic. Later on came to pick up pallets to sell across New England. We were amazed how fast the cheese was spreading across the region. came for even more pallets and took it even further and have come on in recent years and surprised us with even more distribution. Still today it never ceases to amaze us how beloved this cheese has become.
The inspiration for the name of this cheese was Shel’s poem by the same name about a little girl who ate a whale. Finishing something you start isn’t always easy. It takes grit and determination, two traits American Cheesemakers embody to our fullest.
