Lemon-Blueberry Cheesecake Bars

Crust
9 graham cracker rectangles
2 tablespoons granulated sugar
1 teaspoon grated lemon peel
1/4 cup butter, melted

Filling
2 packages (8 oz each) cream cheese, softened
2 eggs
2 tablespoons grated lemon peel
1/4 cup fresh lemon juice
1/2 cup granulated sugar
1 1/2 cups fresh blueberries or Cascadian Farm® organic frozen blueberries (thawed) (from 8-oz bag)

Streusel Topping
1 cup packed brown sugar
3/4 cup Gold Medal™ all-purpose flour
6 tablespoons cold unsalted butter

Well, things are moving quickly on the farm. We are coming into Bloom. We love our natural pollinators, like honeybees, bumblebees, butterflies, moths, wasps, flies, and an occasional hummingbird. However, with our 750 acres, our natural pollinators could use a little help, or a lot of help. 😁 So in order to assist them, we rent honeybee and bumblebee hives to help pollinate the blossoms.  This is to ensure that we produce the biggest and best berries around. This year, we have brought in about 60 million bees!  I’m sure to some it would be a horror movie, but to us it’s just another day on the farm. 😊🐝🫐💕
