Hello Calvino Sausage Fans!
I’m Mike’s daughter, Christina, and he has been making sausage my entire life. Because his technology skills are maxed out with his flip phone, I thought I’d put this together to show you start to finish how sausages are handmade in house each week.
First, he starts with pork butts. They are hand trimmed, and then butchered down to small manageable chunks.
These pieces are fed through a meat grinder, with the plate switched out depending on which sausage he is making and it’s required grind.
Each variety of sausage has been dreamed up and imagined by my dad, with lots of test batches made and tasted with tweaks made, until finally approved to make the menu. Spice mixes for each recipe are weighed out for accuracy, sprinkled over the freshly ground meat, and mixed by hand to ensure even distribution.
Cleaned natural sausage casings are threaded onto the sausage press, which is hand cranked at even speed and pressure to form one looooooong sausage.
This is then hand braided to form links, some differing depending on which variety.
Sausages are then individually bagged, weighed, and stickers added before being put in the case to make their way home to YOU, the hungry and happy customer.
