Make the most of your Farmers Market Summer produce with this Garlic Butter Summer Squash recipe.

Ingredients
4 medium summer squash (zucchini or yellow squash)
4 tablespoons butter
4 cloves garlic, minced
1 teaspoon fresh thyme leaves
1 teaspoon salt
½ teaspoon black pepper
¼ teaspoon red pepper flakes (optional for a kick)
2 tablespoons freshly chopped parsley for garnish

Instructions
Slice squash into half-moons about ¼ inch thick.
In a large skillet, melt butter over medium heat.
Once butter is melted and bubbling, add minced garlic and sauté for about 1 minute until fragrant.
Add sliced squash to the skillet, stirring to coat.
Season with salt, pepper, and red pepper flakes. Cook the squash for about 5-7 minutes, stirring occasionally, until they are tender but still vibrant in color.
Once cooked, sprinkle fresh thyme leaves over the squash, tossing gently to combine everything.
Remove from heat and garnish with freshly chopped parsley.

Ok Harrison Farmer's Market friends, we will have squash and zucchini available in the morning. Stop by from 7am till 11am and grab some.

Look at all of the growth after another week. Looks like we will have squash and zucchini real soon. The tomato plants are starting to set little tomatoes. I am so excited to see them growing so quickly. We may be late with them, but we will have them until November most likely.

So we are running way behind on planting again this year. But, better late than never. I am amazed at the growth of the plants this week. The first picture of each set was from last Thursday. The other two are from today. I cannot wait to start picking this deliciousness.

I will post when we are headed to the market with it.
