4 months ago on February 10th, we quietly opened our doors to our butcher shop. The support that each one of you have shown us has finally gotten us to this point! We have a permanent sign!! She's Beautiful! No more whiplash trying to find which building is ours! A huge thanks to Darla, Randy and everyone they work with at Jorn Sign Company! We couldn't be happier! To celebrate, I had some dry aged Short-ribs that I turned into steak burgers. Stop in and check out our Beautiful Sign!

Well, hello Sunday, you snuck up quickly! If you're feeling the same and need some deliciousness for Sunday supper, we have you covered. The sweet, smoky cherry/ancho chile sausage is in the case with another batch of Polish. The rib eyes are sitting here, asking to be grilled with a side of bacon-wrapped purple asparagus. Or snag a few kabobs..bacon-wrapped meatballs, steak, or balsamic chicken. Top it off with veggie shroom and grab a few old-fashioned hot dogs for the little ones. Don't forget the pups; there's plenty of canoe-cut bone marrow to go around! 🥓

Afternoon, everyone! Swing by and grab some grub! We've got sausages and burgers galore. We've also got some gorgeous steak options, fresh chicken kabobs, stuffed peppers, and spinach/feta stuffed shrooms. And because everything's better with bacon, we've got bacon-wrapped meatball skewers too! Matt's working on a 🍒 and ancho chili sausage soon, because why not? 🔥

Thank you for all the Birthday Wishes yesterday, each one made me smile. I want to thank each and every person who has visited us in the past 3 plus months. As Transplants to Hillsboro 4 years ago, this weekend actually, you ALL have made us feel at home. I truly love what I do, and it gives us such great joy to be able to offer our new friends the absolute BEST meat in Central Illinois! Thank you so much for your continued support!

Now for Business! I feel like this weekend is the kick off to summer. We have a great celebration tonight uptown kicking off the 250th Birthday of our Great Nation! Cards/Cubs starts tonight in St Louis, let's see who you support! NHL and NBA are heading to the finals in a few days and baseball is heating up with the weather. So many wonderful things to celebrate and we hope you think of us when your making your food arrangements.

Happy Sunday! Today is a day to indulge in the incredible spread of delectable delights in our case! New today, our vibrant purple asparagus and olive salad, carefully dressed in our signature housemade lemon vinaigrette, alongside our mouthwatering old-fashioned all-pork hot dogs. In addition, we have spinach and feta stuffed shrooms, pesto and fresh parmesan chicken breasts, beef and pork blend stuffed peppers, marinated ready-to-grill veggie blends, and an assortment of your favorite patties, pork belly, steak burger, steak with bacon, and brisket with blue cheese. Our sausage selection today includes the Texas Tw***ie, jalapeno cheddar, and chicken feta/spinach. We also have an impressive selection of premium cuts, including beautiful rib eyes, strips, filets, and top sirloin. Don't forget, we close at 4 today, but we will be open on Memorial Day at 10 for a few hours to cater to your last-minute needs. Please note that we will be closed on Tuesday this week. Come grab a beautiful NY strip! Matt is restocking the case. We have lots of yummy stuffed peppers, Italian stuffed mushrooms or spinach/feta, and lemon pesto stuffed chicken!!! There are plenty of choices for your grilling needs for the weekend. Reminder: we will be open on Memorial Day for your last-minute needs, but closed on Tuesday.
