We hope this year has been good to you and you are getting prepared for deer season!

For the 2021 Deer Hunting Season, we will NOT be accepting whole deer for processing.

We ARE accepting boneless, cut and cleaned trim for sausage/burger processing. When dropping off your venison trim we ask the following:

1. Trim must be boneless, clean and cut into 3” pieces or smaller.

2. Trim should be bagged or in containers that are easy for us to weigh and store for processing. (Please do not put trim in garbage bags, we have bags available for purchase)

3. Please call in advance to ensure we are available to meet with you to weigh your trim and get your order. 218-239-0800

Throwing out this oldie, but goodie! 3 - 8 point bucks by 7:45 am on opening morning 2006. One of the last years Grandpa Roger hunted.

Carlson’s Old World Sausage is open for all your venison processing needs. We are currently accepting your deer for butcher and processing. Bring them in and we will skin, cut/wrap for $100. Caping is an additional $75. Sausage processing is additional and price sheets are available at the shop. OR you are welcome to bring in your venison trim; chunked and bagged for sausage processing as well.

Hello everyone! I lost my cell phone and locked myself out of iCloud trying to find it. I have a new phone with the same number (218-239-0800), but won't have access to my contacts for TWO WEEKS! Today we had a first hand experience at meeting a newborn calf! In helping my parents with their business, we slaughter and butcher beef on a regular basis. Today we had an emergency call of a pregnant cow who had been having a difficult time getting up for a few days. A veterinarian had checked the cow the day before, and said that if it didn't get up by morning, the farmer would lose the cow and calf. The farmer had made the decision to try and save the meat and also wanted to try to do a c-section to save the calf. My parents had never done a c-section, but were willing and excited to give it a shot.

My son, Matthew, and I tagged along and got to experience watching (from about 100 yards away) a successful c-section and saving the calf's life!!!

Matthew did want to take the little one home, but spending a half hour with the little baby was fair trade enough! Exciting day for this little boy, my parents and me!

As rifle season for deer has ended and muzzleloader season has kicked in to full swing; we have just finished our first round of venison last weekend and are planning for the next round soon. Hunters had a very successful year with many nice bucks and does coming through our doors.

We are still accepting venison and are happy to take your orders. Please keep in mind with the abundance of venison we have already accepted to process and our other customers with beef and pork that have been scheduled for some time; that processing of venison will be happening, but not at as quick of rate that you may have seen in the past. Most of you will see your venison sausage done in late-December to early-February.

We look forward to serving you; and as always, we take great pride in what we do! With us, your meat is custom processed - we do not mix batches, we allow you to choose batch sizes and you get back your own meat each and every time.

The first week of deer season has come and gone! We have had an abundance of deer come through our doors and are busy processing. We are accepting all deer - hide on or already skin out AND venison ready for processing. Please feel free to stop by to drop off your meat or give us a call at 218-835-7848.

Opening day was a huge success for us. We filled out with 3 nice bucks and a doe. Lots of laughs, tons of fun and the grandkids even got in on the fun!

Can't wait to see you all and hear your stories too!
