🥩 NEW TO BUYING BEEF BY THE HALF OR WHOLE? LET’S TALK ABOUT WEIGHT!
If you've never purchased beef directly from a local producer, it can be confusing when the weight you purchase doesn't match the amount of meat that ends up in your freezer.
For example, a 440 lb hanging-weight half will not result in 440 lbs of packaged meat. And that's completely normal!
Here's the simple breakdown:
🐄 Live Weight — What the animal weighs before processing.
🥩 Hanging Weight — The carcass weight after the hide, head, organs and other non-carcass portions are removed.
❄️ Packaged Weight — The finished beef you take home after aging, cutting, trimming, deboning, grinding and packaging.
HOW MUCH MEAT WILL YOU GET?
A general estimate is 60–70% of hanging weight.
For a 440 lb hanging-weight half:
• 440 × 60% = 264 lbs
• 440 × 70% = 308 lbs
So you're looking at roughly 265–310 lbs of packaged beef.
That's an estimate, not a guarantee, because your final weight depends on the animal and the choices you make on your cut sheet.
WHY THE DIFFERENCE?
Weight can be lost through:
• Aging and moisture loss
• Bones removed from cuts
• Fat and trimming
• Fabrication loss
• Bones, organs or fat you choose not to keep
• Your individual cutting selections
Your cut sheet matters! One customer may keep bone-in cuts, soup bones, organs and fat for tallow, while another may prefer boneless cuts and less trimming. The same hanging weight can result in different packaged weights.
WHY DO WE USE HANGING WEIGHT?
Our processor charges based on the hanging weight, so that's the weight we use for pricing halves and wholes. Your final packaged weight depends on how your beef is cut and what you choose to keep.
The easiest way to remember it:

📋 Cut sheet = your choices
🥩 Packaged weight = what ends up in your freezer
