Small-Batch Strawberry Rhubarb Freezer Jam

🛒 Ingredients:
• 3 cups fresh rhubarb, finely chopped
• 3 cups strawberries, hulled and chopped
• 2 cups granulated sugar
• 2 tablespoons fresh lemon juice
• Pinch of salt
• 1 teaspoon vanilla extract, optional

👩‍🍳 Directions:
1️⃣ In a large saucepan, combine the rhubarb, strawberries, sugar, lemon juice, and salt.
2️⃣ Let the mixture stand for 10 to 15 minutes so the fruit starts releasing its juices.
3️⃣ Bring to a gentle boil over medium heat, stirring often.
4️⃣ Reduce the heat to medium-low and cook for 25 to 35 minutes, stirring regularly, until the fruit breaks down and the jam thickens to a spoon-coating consistency.
5️⃣ Stir in the vanilla extract, if using, and remove from the heat.
6️⃣ Let the jam cool for 15 to 20 minutes.
7️⃣ Spoon into clean freezer-safe jars or containers, leaving about 1/2 inch of headspace for expansion.
8️⃣ Cool completely, then seal.

❄️ Storage:
• Refrigerator: up to 2 weeks
• Freezer: up to 3 months
• Thaw in the refrigerator overnight before using

This is a refrigerator/freezer jam and is not a shelf-stable canning recipe.

Really..... Winterfest In May....

🤦‍♀️🤦‍♀️🤦‍♀️ Yup, that's snow! If you're going to the ADK's this weekend it'll be quite chilly! Cold enough on the models in the highest elevations to maybe get some frozen precip early Saturday morning!
