Sungold Tomato Rigatoni ☀️🍝🍅

We got a stunning sungold and basil haul from Good For You Gardens today and completely pivoted our dinner plans 😊 so worth it this time of year, it’s still summer!

This one is creamy, a little spicy, a little sweet from the sungolds and SO good with truffle burrata on top (not pictured because Kev is a little fussy and likes his mixed in) 😮‍💨

You’ll need:
Sungold cherry tomatoes
Sweet Vidalia onion
Garlic cloves
Olive oil
Rigatoni
Butter
Splash of cream
Calabrian chilis in oil
Fresh basil
Salt
Parmigiano Reggiano
Truffle burrata

Heat your oven to 450°F.

Toss the Sungolds, sliced Vidalia onion + whole garlic cloves with a generous drizzle of olive oil and salt. Roast for about 25 minutes, until the tomatoes have burst and everything is soft, jammy + getting a little charred around the edges.

While those roast, cook your rigatoni until al dente, making sure to save about a quarter cup of pasta water before draining.

Add 2 tbsp butter back into the warm pot and toss the rigatoni in it. Set aside while you make the sauce.

Squeeze the roasted garlic out of the skins and add it to a blender with the tomatoes, onion + every last bit of juices from the pan. Add a splash or two of cream, chopped Calabrian chili to taste, fresh basil, and a little more salt. Blend until super smooth and creamy.

I like to strain the sauce after blending — totally optional, but it makes it extra silky + glossy (this is the step that pushes this one over the edge!)

Pour the sauce over the buttered rigatoni and bring it together over medium-low heat with a good splash of reserved pasta water. Add more as needed until the sauce gets glossy and really clings to the pasta. Toss with freshly grated Parmigiano Reggiano.

Plate it up with truffle burrata + a little spoonful of Calabrian chili oil if you like the heat. 🤌🏼
