This week on NPR I heard a report on Pink Slime, or Lean Beef Trimmings. These are lean portions of meat, seperated from the outer layer of fat through a heated process and then gased with ammonium hydroxide. They are unlabled and in 70% of ground beef available in the grocery store.

Blossom Mesa Meats does not use this proces in making our ground beef.

An estimated 70 percent of the ground beef supply contains these lean bits of meat derived from muscle and connective tissue. The industry calls the trimmings "Lean Finely Textured Beef."
