John and Sara PUT IN THAT WORK yesterday so y’all could absolutely crush some boudin today. 😂🔥

We’ve got 3 boudins hitting the case today, and every one of them is bringing the heat:

🔥 TEXAS BRISKET BOUDIN
Smoked brisket mixed with fresh trinity, garlic, jalapeños, rice and fresh green onions.
LIMIT 4 PER PERSON

🐷 TEXAS COUYON BOUDIN
This is about as close as we get to a traditional Louisiana-style boudin. Pork smoked, braised and shredded into beautiful chunks, then mixed with the trinity, the Pope 👀, spices, rice and fresh green onions.

🌮 LIMITED-RUN CARNITAS BOUDIN
Pork smoked, then fried up with carnitas seasonings, grilled jalapeños and some other deliciousness we probably shouldn’t even be allowed to stuff into a casing. 😂

We’re still at it. This is closest to a Louisiana boudin we make. Pork base, fresh trinity with the pope and cayenne. Add fresh green onions and rice and BOOM… This is the Texas Couyon Boudin.
