Hope Farms HTX Urban farm: produce delivery, on-site markets, farmer training, cooking/gardening classes & camps WHY HOPE FARMS?

Hope Farms is a critical project to achieve our goal to make healthy food equitably available to Houstonians. Our seven-acre site, in the shadow of downtown, is where we grow affordable, healthy produce, offer an on-site farm store and home produce delivery, train new urban farmers and provide a place for the entire community to learn about and celebrate fresh, locally-grown food with cooking and gardening classes for all ages and events to celebrate the harvest. Recipe for Success Foundation was founded in 2005 to combat childhood obesity by changing the way children understand, appreciate and eat their food and to educate and mobilize the community to provide them with healthier diets. We are transforming lives in Houston and beyond by making healthy food fun, tasty, affordable, easy and accessible with programs that teach, empower and inspire healthy eating. Recipe for Success Foundation's Hope Farms project is made possible with funding from USDA, The Duncan Family Foundation, Wells Fargo, United Healthcare Foundation, the Clay Family, Suzanne and John Fain, Cigna Healthcare, John Deere, Walmart Foundation, Simmons Foundation, Boeing Employees, Luby's Fuddruckers, the Cavnar Foundation, Coca Cola Foundation, Mahindra, The Mission Continues and many others. The season is changing at Hope Farms—and so is dinner.
That’s one of the pleasures of Farm Share. Instead of eating from the same grocery list all year long, your kitchen follows the rhythm of the farm.
New season. New harvest. New possibilities.
What’s your favorite fall vegetable?

Backpacks dropped. Homework started. Someone needs to be somewhere in 40 minutes.
Dinner doesn’t need to become one more crisis.
Tonight’s formula:
1 Farm Share vegetable + 1 pantry staple + 1 easy protein = dinner.
Roast it. Toss it with pasta. Fold it into tacos. Put it over rice. Add it to eggs.
Fresh food doesn’t need an elaborate recipe.
Sometimes it just needs to be in the house when you need it.

One extraordinary evening makes so much possible.

Children discovering that vegetables can be delicious.

Teachers learning to bring gardens and kitchens into the classroom with Seed-to-Plate Nutrition Education™.

Fresh food growing in the heart of Houston.

A new generation learning how to grow it.

For 21 years, Recipe for Success Foundation has been changing the way children eat by doing something deceptively simple:

We teach them how.

On November 16, Houston's culinary community gathers around our table to help us keep doing it.

Delicious Alchemy.

Before these veggies reaches your cutting board, someone has watched them for weeks.

Seed. Water. Sun. Weather. Pests. Growth. Patience.

Then comes the moment every farmer learns to recognize:

Ready.

At Hope Farms, we don’t just want you to eat fresh food. We want you to know where it came from—and the people who grew it.

Meet Bre, the farmer behind this week’s harvest.

ZUCCHINI: Zoodles, fries, boats… zucchini does it all! 😉

Zucchini is low in calories but high in fiber, vitamin C, and potassium, making it a healthy and hydrating veggie for growing kids! Its high water content makes it super hydrating on warm days and zucchini is actually a type of summer squash, and you can eat it raw, roasted, or even spiraled like noodles!

Cooking Tip: Sprinkle with a little salt, and let it sit for 10 minutes to draw out excess water before cooking.

Halve zucchini, scoop out the center, fill with marinara and cheese, then bake until bubbly for a fun and healthy zucchini boat or spiral zucchini into noodles, sauté lightly with olive oil and garlic, then top with marinara or cheese for a healthy, low-carb pasta!! 🍝

GREEN BEANS: The mood-boosting pods of happiness! 🫛

These crisp veggies are packed with FOLATE that helps your brain produce serotonin and dopamine - your natural "feel-good" hormones!

They are high in dietary fiber, which supports digestion and helps keep kids feeling full longer. Green beans are also packed with vitamin C, which helps boost the immune system and supports healthy skin!

Recipe ideas:
- Toss green beans with olive oil and parmesan, then roast them into crispy “green bean fries” kids can dip in ketchup
- Chop green beans and add them to mini quiches
- Sauté green beans with mild teriyaki sauce and sesame seeds

They’re packed with vitamins A, C, and K, as well as fiber, calcium, and antioxidants that help support healthy bones, digestion, and your immune system!

Chop mustard greens finely and mix them into cheesy scrambled eggs for a colorful breakfast boost or blend mustard greens into a mild pesto with olive oil, parmesan, and nuts, then toss with pasta for a hidden veggie twist!

EGGPLANT: Hidden veggies, happy tummies 😋

Eggplant contains antioxidants such as nasunin, found in the purple skin, which helps protect cells from oxidative stress. It also provides small amounts of vitamins and minerals including vitamin C, vitamin K, potassium, and manganese. Because it is naturally low in carbohydrates and contains mostly water, eggplant can be a hydrating and heart-friendly addition to balanced meals!

Chef's Recommendations:
- Roasted eggplant cubes tossed in mild marinara and mixed into pasta
- Baked eggplant sticks with ranch
- Dice eggplant small and mix it into taco meat for a hidden veggie boost
- Add finely chopped eggplant to meatballs to keep them juicy and tender
