Meet the Roaster: Native Coffee Co /

A roasting project born with the intention of connecting the consumer to origin, Native Coffee Co is spread across Dallas, Colombia, and Panama to share curated offerings from some of the best producers in the world.

We have been honored to have been a part of Native’s initiative for the month of May. Currently, enjoy a washed Castillo on Espresso and an anaerobic Castillo on Pour Over, both by producer Diego Bermudez.

Coffees from Native also available on retail.

Headquarter in Bath, England, Colonna Coffee seeks to build relationships both with their customers and their partners who share the pursuit of exceptional coffee. With care and intention over sourcing and flavor profiling, their coffees are meant to be a sensory exploration.

We have been honored to work with Colonna as our guest roaster last month. Currently, we are enjoying this red honey-processed coffee from the Chelbesa region in Ethiopia as our Unique espresso option. This coffee reminds is of dried fruits & florals when enjoyed on its own. Enjoy this and other coffees from Colonna available for retail.

Join us next Tuesday April 14th for a special Slow Bar service – a space where we highlight extraordinary coffees from roasters we admire in an intentional and serene atmosphere, curated by one of our expert baristas.

This next Tuesday, Austin Nichols will be sharing his coffee used in the 2026 U.S. Brewer’s Cup – an amazingly flavorful anaerobic natural Gesha from the world-renowned farm .

Visit us next Tuesday from 9am-12pm to get a glimpse of the unique & rare coffees used in competition.
