Father's Day is NEXT Sunday, June 21. The (loud!) sound of the meat dough mixer going means that fresh sausage & lunch meat dough is made here on site! This industrial sized machine mixes the ground meat dough with the spices, & can hold 200 to 300 pounds per batch. If you look closely along the left side of the video, you can just see the chopper blades in the back rotating! Schwenkbraten: tender, boneless (about 1/2 pound pieces) marinated pork steaks, seasoned with onions & a medium spicy dry rub of Claus' secret spice blend. If you don't see them in our case, just ask, & we can make them up for you, or you can call a day or two ahead to order & we'll have them ready! Cook them about 20 minutes on medium heat, on the grill or in the pan with a little oil, & you will get a mouthwatering taste! Try a bite to get the amazing flavor, & THEN try it with tzatziki, the sauce from gyros -- buy some at a Greek restaurant or grocery store, or make your own!

The (loud!) sound of the meat dough mixer going means that fresh sausage & lunch meat dough is being made on site here today! This machine mixes the ground meat dough with the spices. Bacon makes the world go 'round & makes EVERYTHING taste good! Claus gets in fresh pork bellies every week (1st picture), trims them, cures them, hangs them from meat hooks & smokes them (2nd picture), & then we slice them to serve to customers (3rd picture). Claus uses a mix of hickory & oak sawdust in the smokehouse bin, so it always smells like a campfire in here. NO fake liquid smoke pumped in for the aritificial smell & flavor, like grocery store bacon. If you have not yet tried our bacon, you are definitely missing out!
