While standard offal is prized for its earthy, mineral depth, Wagyu offal takes it to another level because of that legendary intramuscular fat. Whether it’s the rich, creamy texture of shimo-furi (marbled) liver or the succulent, melt-in-your-mouth quality of marucho (small intestine), the high concentration of oleic acid transforms these cuts from “tough” or “gamey” into something buttery and sweet.
In high-end Japanese yakiniku, these pieces are often more coveted than the steak itself because they offer a complex flavor profile that you simply can’t find in muscle meat alone.

Now the question is, why do we flip the steak over so much?

There are two reasons on a grill and one on a pan.

On a pan, it’s to send heat pulses without overcooking the exterior.

On a grill, The Updraft: This creates a plume of smoke laden with oils, minerals, and sugars. Because the grill is an enclosed or semi-enclosed environment, this “flavor smoke” rises and coats the underside of the meat.

Guaiacol: This is a primary compound produced when plant polymers (like the wood used to make charcoal) burn. It provides that classic “smoky” aroma.

• Synergy: When the meat juices hit the charcoal, they mix with these wood-based aromatics. The movement of the meat ensures that no single side gets scorched, but rather every surface gets a turn in that “aroma bath.”

A fully loaded grill tastes better than if there was just one steak on it.
