This season’s cucumber bed…June 14.

In the past, I would plant a large amount of cucumber plants. They would normally all start fruiting at the same time. So this year I split up my planting to 3 levels. More mature, small seedlings and direct sowing seeds.

My more mature plants were seeds I saved from last season. I started them from last seasons saved seeds in the greenhouse in Feb.. They were pickling cucumbers. I’ve discovered I really like this size. They are perfect for a lunch salad. Early on, I sprayed a mixture of baking soda and water on them. I noticed some burn spots on that growth. Note to self… shake shake shake! The newer growth on those same plants are fine. Also, I need to get better about picking them before they turn yellow. It happens fast. The fruit turns bitter when yellow and signals to the plant to stop fruiting.

Last season I got so many cucumbers that I canned and pickled them. Then I went on a salt free diet and ended up giving them away.

According to the Cleveland Clinic,

…“Are cucumbers good for you?

Yes, cucumbers are a great part of a healthy diet! Cucumbers belong to the gourd or Cucurbitaceae family, along with pumpkins, squash and melons. This low-calorie fruit (yes, a fruit — it has seeds and grows from a flowering plant!) is chock-full of water and other nutrients, including fiber, vitamins A, K and C, potassium and calcium. One serving equals about 100 grams, or one-third of a medium-size cucumber.

A serving of raw cucumber, eaten with the peel, has:
* 15 calories.
* 0.1 grams of fat.
* 3.6 grams of carbohydrates.
* 0.5 grams of dietary fiber.
* 1.7 grams of sugar.
* 0.7 grams of protein.
*
Cucumbers offer essential nutrients, too.

One serving of cucumber delivers:
* 16.4 micrograms of vitamin K (14% daily value).
* 147 milligrams of potassium (3% daily value).
* 2.8 milligrams of vitamin C (3% daily value).
* 16 milligrams of calcium (1% daily value).”…

Anyone with a good low sodium pickling recipe or how to best use an abundance of cucumber, please share.

It always amazes me how fast the beds fill in after planting. I love having this one bed right out my side kitchen door… where I can just step out to snip off a variety of lettuces, some arugula and cilantro. Growing my own organic food has to be one of the best decisions I’ve ever made. Theres no better feeling than knowing …I have been the only one to touch what I’m eating from seed to my mouth (and never sprayed with any harmful cancer causing agents or grown next to a CAFO getting irrigation run off from all the diseased and sick animals).

And with this nice size suburban back yard garden…I get lots of daily exercise! According to Dan Buettner, “gardening has been found to be the best physical activity.”

With the price of food going up everyday… it’s nice to still be able to eat a very healthy diet right from your own back yard…and to share with friends and family.
