For the Coconut Cheesecake Base:
1 1/2 cups crushed graham crackers
1/2 cup shredded coconut, toasted
1/3 cup unsalted butter, melted

16 ounces cream cheese, softened
1/2 cup granulated sugar
1 cup coconut cream
1 teaspoon vanilla extract
2 large eggs
For the Mango Panna Cotta:
2 ripe mangoes, pureed
1 cup heavy cream
1/2 cup sugar
2 teaspoons gelatin, dissolved in 3 tablespoons of warm water
1/2 cup mango juice

Preheat your oven to 350°F (175°C).
In a bowl, mix together the crushed graham crackers, toasted shredded coconut, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let cool.
In a separate bowl, beat the softened cream cheese with sugar until smooth. Add the coconut cream and vanilla extract, mixing well. Beat in the eggs one at a time until fully incorporated.
Pour the cheesecake filling over the cooled crust in the springform pan. Bake for 50 minutes, or until the filling is set. Allow the cheesecake to cool completely.
For the mango panna cotta, combine the mango puree, heavy cream, and sugar in a saucepan over medium heat. Once heated, remove from heat and stir in the dissolved gelatin and mango juice until fully combined.
Let the mango panna cotta mixture cool slightly, then pour it over the cooled cheesecake in the springform pan. Refrigerate for at least 4 hours, or until the panna cotta is set.
Before serving, garnish the cheesecake with fresh mango slices and a sprinkle of toasted coconut.
