Prior to the muscle profiling research, much of the chuck was used for grind. Today, the second-most tender cut is now enjoyed as the Flat Iron Steak!

🥩FLAT IRON FRIDAY🥩

In the late 90's beef producers invested in research through their Beef Checkoff program to find more value in the beef carcass. Dr. Chris Calkins lead a team of researchers at the University of Nebraska-Lincoln to identify individual muscles in the chuck and round.
