Out of the press this morning.

Montasio — a time-honored Italian cow’s milk cheese from the northern regions of Friuli-Venezia Giulia and Veneto. Young (Fresco), it’s soft, creamy, and gentle on the palate. With time, it deepens into something richer—nutty, slightly sharp, and full of character (Mezzano and aged). A true workhorse cheese, equally at home on the table, melted into dishes, or grated over a hearty meal.

After curd development, the curds are transferred into molds and pressed for 12½ hours to form the wheel. From there, the wheel begins its finishing process—air drying for 24 hours, turned every 8–12 hours, followed by a soak in saturated brine (4 hours per pound). It is then air dried once more for another 24 hours before being placed into the cave to age and develop its character.
