We started making our own Old Fashioned Andouille!! Started with chittlin’s seasoned with our seasonings and green onions, stuffed it all into a beef middle casing, and smoked it for four hours over oak wood!! If you’re looking for that Old School “gut in gut” Andouille, well look no further!!
