I’m a little late getting our weekly fresh case posted, but you still have plenty of time to pick something up for the weekend.

This week we have a couple of different products to offer:

-Chuck Eye Steak (poor man’s ribeye). This cut comes from the end of the Chuck, where it meets up with the ribeye. These steaks are juicy and flavorful and great on the grill!

-Flat Iron Steak (patio steak). These steaks are cut out of the blade portion of the Chuck. These small steaks are big on flavor. They are great grilled or pan fried on the stove. This cut holds up well to heat and is great for those of you that like steaks a little more on the done side.

-Brisket Burger. This is exactly what it sounds like. Just ground brisket. We coarse ground a whole fresh brisket. This burger will have a slightly different texture and flavor than our regular ground beef. Give it a try and let us know what you think. It will be great as a patty or in your favorite chili recipe (It’s never too hot for chili!)

Have you tried a Picanha Steak yet? (pronounced pee-Kahn-yah) This is one of my new favorite steaks. They are tender, juicy, and full of rich beefy flavor.

Picanha’s are super easy to prepare and serve. With these steaks I just gave them a generous coating of our house steak seasoning and grilled over high heat to med/med rare. Make sure to leave the fat cap on for cooking as it adds to the flavor and juiciness of the steak.

We have a few Picanha steaks left in the fresh case so get them before they’re gone. If you happen to miss out on them this week, never fear, we will have more in the case next week too. $12.99/lb
