Many people have heard that tri-tip should be cut against the grain, but the truth is this applies to most cuts of beef. Cutting against the grain shortens the muscle fibers, making each bite more tender and easier to chew.

Cutting with the grain leaves those fibers long, which can make even a great piece of meat seem tougher than it really is.
