Mini Key Lime Cheesecakes

Elevate it with a drizzle of Olivaceto's Persian Lime Olive Oil for a silky, rich, texture butter just can't match!

Ingredients

Graham Cracker Crust
• ⅔ cup graham cracker crumbs
• 2 tbsp melted unsalted butter
• 1½ tbsp sugar
• ¼ tsp kosher salt

Key Lime Cheesecake Filling
• 8 oz full-fat cream cheese (room temp)
• ¼ cup sour cream
• ½ cup sugar
• 2 large eggs
• 1½ tsp vanilla extract
• ¼ cup key lime juice

Finish
• Persian Lime Olive Oil (the upgrade)

🥣 Instructions

1. Preheat oven to 350°F

2. Make the crust
Mix graham crumbs, butter, sugar, and salt until it feels like wet sand.
Line a mini muffin tin with liners.
Add a heaping teaspoon of crust to each and press down firmly.

Bake for 4–5 minutes, then let cool.

3. Make the filling
In a bowl, mix cream cheese, sugar, eggs, sour cream, vanilla, and lime juice until smooth and silky
(about 2 minutes with a mixer).

4. Assemble
Add a heaping tablespoon of filling on top of each crust.

5. Bake
Bake 16–18 minutes, until centers no longer jiggle.
Cool completely, then refrigerate at least 3 hours (this step matters).

The Finish (don’t skip this)

Right before serving, add a light drizzle of Olivaceto Persian Lime Olive Oil

Hi friends,

I wanted to send a quick, personal note to let you know that Olivaceto will be closed today, Friday, March 20.

As many of you know, this is a little shop that runs on family and this weekend, we are all stepping away for my niece's baby shower in Kentucky.

I was able to have someone cover the shop for Saturday and Sunday (thank goodness!) So we will be ready to see you, share samples, and help you find your next favorite EVOO or Balsamic!

Thank you, as always, for supporting my small business and for understanding that sometimes family comes first. It truly means the world to me.

From this tree in Portugal… to this bottle in your kitchen.

These green Koroneiki olives were harvested and crushed in October 2025, when they’re still young, vibrant, and packed with natural antioxidants. That’s why this oil has that beautiful peppery finish and fresh green flavor.

What makes this EVOO even more special is how it was made. The mill uses high vacuum malaxation, to protect the oil from oxidation. It preserves what matters most, the flavor, the freshness, and the polyphenols!
