It may be May 15, but it is chilly and rainy and we have a bit of a cold/allergies running through our home so I am making a pot of chicken noodle soup.
Do you know that it is scientifically proven that chicken noodle soup improves your health?
Here are some of the incredible facts about homemade chicken noodle soup:
It limits the spread of white blood cells thus decreasing inflammation, reducing congestion and slowing the progression of flu/cold symptoms.
It helps improve hydration and electrolytes that are vital for every day life, and especially when trying to get well.
Loosens congestion from the hot broth.
Great source of protein, easy to digest, and provides necessary vitamins and minerals.

Homemade Chicken Noodle Soup
1 Whole Chicken
1 Onion
6 Stalks of Celery
*6 Carrots (I did not have any today so not included, but excellent source of Vitamin A and a nice flavor addition)
6 Garlic Cloves or 4 Tablespoons Minced Garlic
Salt and Pepper
Egg Noodles
Water
**Chicken Broth if wanting more liquid in finished product.**
Rinse your whole chicken and place in your stock pot. Cover with water with at least 2" covering chicken.
Dice/mince vegetables then add to pot.
Season generously with salt and pepper.
Turn stove to medium heat.
Cook chicken in a slow heat till internal temperature of 165°. (Typically about 90 minutes cook time)
Remove chicken from pot. Leave liquid and vegetables in pot, but remove from heat. (Included pictures, but I usually can get the chicken out of the hot liquid by utilizing tongs. Sometimes a bird is too large and I need tongs and a spoon. Have your colander ready to place your chicken in near your bot of boiling broth.)
Let chicken cool. Once cool enough to touch, pull chicken off bones. 1 whole chicken provides a good amount of meat.
Depending on how much meat you want in your soup you may decide to save some of your pulled chicken for a second meal (chicken quesadillas, scrambled eggs and chicken, personal batch of chicken salad etc)
Return pot to medium high heat bring to a gentle boil. Add egg noodles and cook for 6-8 minutes; done to your liking. Do not drain.
Add shredded chicken to pot, mix well. Serve.
**The noodles will soak up a lot of the broth that was created while the soup was being made. May need to add some additional chicken broth if you want it soupier.
Also, be generous with your salt for flavor as the broth and noodles will soak it up, but not too much so that it is not palatable. May need to taste your soup before serving to determine if seasoned to your liking.**
