Watermelon Jelly 🍉
Here's a beautiful and refreshing summer treat — Watermelon Jelly! It captures that fresh watermelon flavor perfectly and makes a lovely gift or pantry addition.
Watermelon Jelly Recipe
Yield: 8 half-pint jars
Ingredients:
* 4 cups strained watermelon juice (from about half of a seedless watermelon)
* ½ cup lemon juice
* 2 boxes powdered pectin (regular yellow box)
* 4½ cups sugar
* Optional: 7 drops red food coloring (for a prettier pink color)
Instructions:
1. Combine the watermelon juice, lemon juice, and pectin in a large pot. Stir well.
2. Bring the mixture to a full rolling boil, stirring constantly. Boil for 1 minute.
3. Stir in the sugar and bring it back to a full rolling boil. Boil for another 1 minute.
4. Remove from heat and skim off any foam.
5. Ladle the hot jelly into clean jars, leaving ¼-inch headspace.
6. Wipe rims clean, apply lids and rings, and tighten to fingertip tight.
Processing:
Water Bath Canning: Process half-pint jars for 5 minutes (adjust for altitude).
Let jars cool undisturbed for 12–24 hours. Check seals, label, and store in a cool, dark place.
This jelly is sweet, bright, and tastes just like summer. Perfect on toast, biscuits, or paired with cream cheese. A fun way to preserve the taste of watermelon!
