Ingredients:
1 cup rolled oats
1/2 cup peanut butter
1/4 cup honey or maple syrup
1/4 cup chia seeds
1/4 cup mini chocolate chips (optional)
Instructions:
In a medium-sized bowl, mix the oats, peanut butter, honey, and chia seeds together until well combined.
Stir in the optional mini chocolate chips.
Place the bowl in the refrigerator for at least 30 minutes to let the mixture firm up.
Roll the chilled mixture into bite-sized balls (about 1-inch in diameter).
Store the energy bites in an airtight container in the refrigerator for up to a week.
Tips:
Try using almond butter or cashew butter as a substitute for peanut butter.
For a sweeter treat, add a tablespoon of cocoa powder to the mixture.
