Need an easy dinner that tastes like you spent all day in the kitchen? 🙌

Our Sutter Buttes Salsa Verde Simmering Sauce does the heavy lifting in these creamy, cheesy chicken enchiladas! Using a rotisserie chicken keeps prep to a minimum, making this the perfect busy weeknight meal that’s always a crowd-pleaser.

Easy Salsa Verde Chicken Enchiladas

Ingredients

* 1 jar Sutter Buttes Salsa Verde Simmering Sauce
* 1 cup sour cream
* 1 rotisserie chicken, shredded
* 2–3 cups shredded pepper jack cheese
* 6–8 flour tortillas

Instructions

1. Preheat oven to 350°F.
2. In a bowl, combine the Salsa Verde Simmering Sauce and sour cream until smooth.
3. Mix about half of the sauce into the shredded chicken.
4. Fill each tortilla with the chicken mixture and a sprinkle of pepper jack cheese. Roll tightly and place seam-side down in a greased 9×13 baking dish.
5. Pour the remaining sauce over the enchiladas and top with the rest of the cheese.
6. Bake for 25–30 minutes, or until hot and bubbly and the cheese is melted.

Top with fresh cilantro, extra sour cream, and your favorite salsa, if desired.

Makes 6–8 enchiladas. Enjoy!
