My brother found this marinade recipe called "Cuban Mojo", so I made a batch & marinated thin cut bottom round for a couple days before he cooked it. I love to cook for others & I burn out when it comes to cooking for myself. My recent go-to snack is sourdough toast with a drizzle of good olive oil, a sprinkle of salt, a smear of goat cheese, a dollop of strawberry freezer jam, a some fresh ground black pepper.

Bone broth made from prime rib bones and scraps and pork bones and scraps. I roasted everything for an hour and simmered it for six hours. Ideally, if I had the time or a larger slow cooker, I would simmer it for up to a day. Regardless, the resulting stock has excellent flavor and though fatty from the lard and tallow, it'll be perfect for soups and gravy. Happy New Year to everyone and happy cooking!

I love leftovers. I will double a recipe for the sole purpose of having leftovers. Even better, I love cold leftovers; I never reheat my food. I do not, however, love leftover potatoes in any form except scalloped. So, when I came home with most of my french fries from a recent visit to LJ's Bistro & Bar, I knew I wanted to panfry the leftovers. A little bacon grease, some grated cheddar, fresh chives from my garden, & a dollop of sour cream made a very satisfying dinner the following night.

Today, let's look at how to cook quinoa. As I was researching this, I found at least 6 different ways to cook it & all claimed to be the best. I've tried a couple ways but the best way I've found to cook quinoa is how I cook rice: 1 cup quinoa to 2 cups liquid. Toasting quinoa before cooking will add extra flavor & help prevent mushiness as well as spreading the cooked quinoa out to cool & dry out a bit. The more steam escapes, the less risk of mush.
