Substitute guanciale for pancetta in many pasta, carbonara, amatriciana style preparations. Also consider as a unique pizza topping or served in a GLT Guanciale Lettuce Tomato bruschetta or sandwich finished with some mayo or scratch made aoili.
Need your guanciale sliced or diced...just ask our skilled butchers to simply cut to your need.

🍽Savory beef broth and cream (or dairy alternative) simmered steel cut oats au gratin, mild and sharp cheddar with crispy guanciale and crimini chips and fresh chopped Colorado organic greenery (your favorite blend of herbs thyme, basil, oregano or sage singularly or combined.
METHOD OF PREP
OATS.....Follow quick or regular oats directions using beef (or other) broth or bullion and cream instead of just water or milk season with a little salt and fresh cracked pepper.
Top with blended cheddar or substitute with Parmigiano Reggiano or Pecorino, or other favorite.
GUANCIALE & CRIMINI CRISPS
Prepare a heavy pan or skillet on low to medium heat Render the guanciale slices until golden brown and crispy...think pan bacon. Set aside until service.
Using the rendered fat slice and same pan lay the crimini aka baby bella (baby portobella) or favorite mushroom(s) of your choice over low to medium heat until crisp.
Optional method... Crisp both guanciale and mushrooms in an oven until crisp.
TO SERVE
Serve the au gratin oats, top with crisps and chopped greenery just before serving for the best experience.
Adjust seasonings to desired tastes.
