Spice-Roasted Shrimp with Pistou will prime our palates for our entrée from the sea. A Celery Root and Apple Salad with Hazelnut Vinaigrette mellows us out so that we can enjoy every individual taste of Baked Wild Fish with Almonds and Raisins- a delicate and slightly sweet combination which really compliments the fish. (This will be a non-salmon white fish, but I need to see what is available at the market that week that is fresh and wild). A Melange of Quinoa, Onion and Fennel will accompany the fish as well as Sauteed Kale and Swiss Chard.
Orange-Scented Brownies with Three More Flavors will send you off into the evening in ecstasy…..

We’ll be sending ourselves to the moon and back with a great menu for this fall dinner:
Olive Oil-Poached Tuna with Anchovy-Caper-Currant Sauce, reminiscent of days along the Mediterranean, is our starter. Warming things up a bit more with Five-Spice Beet Soup, utilizing famously gargantuan Pavilion-grown beets. Not really exotic, but evermore available Wild Boar with Shallots, Plums and Armagnac is our exciting but also comforting entrée this evening…served with a stunning Layered Root Vegetable dish which comes out looking like a beautifully constructed English Dry Stone Wall, but tastes ever so much better….Green Beans Sauteed with Chile, Mint and Crisp Onions round a lovely palette of color on our plates.
A finito: Stracciatelli Tortoni Cake with Espresso Fudge Sauce…no words..

Our appeteaser this evening is a fun one- Lettuce Wraps filled with Cauliflower Caviar and Frizzled Prosciutto! No chicken or turkey before the big day- Pork Medallions with a Green Olive and Currant Pan Sauce, served with Brussels Sprouts Gratin and Roasted Butternut Squash with Pumpkin Seed Pesto. Delicate and only a tiny bit sinful Pear Souffles with Chocolate Bourbon Sauce bring our evening to a close with sweet reverie…..
