It's way too early for most folks to be thinking about Thanksgiving. That's not the case here at Rhea's Mill. I had to order these turkey poults back in February. They were hatched last Tuesday. I will brood them indoors for a week or so then raise them out on pasture until October/November.

It's been a long day or three, so we ordered some take out burgers and onion rings from the local drive in.

I opened a brand new PLASTIC bottle of ketchup and managed to sq**rt it everywhere! There is just no winning with those things. The minimal amount of pressure you need to apply to get anything out of them also will reach the ceiling fan.

I'm so done with plastic sq**rt bottle condiments. I ordered a couple cases of old fashioned nothing fancy and nothing added ketchup in classic GLASS bottles from a small family owned company out of Cleveland, Ohio!

A week ago today, I had a round of chickens taken to the processor in Clinton. I didn't have the time or space to do them ourselves, this time. I hope to have another 407 pounds of chickens in next week or so.
I'm also due to get baby turkey poults in about 5 o'clock in the morning! They will be getting brooded in the barn until the weather cooperates.

I was down at the meat processor picking up some of my animals, this morning. I came back with some extra beef tri tips. They were too good to walk away from. Also, I've some fresh lamb cuts in the freezer. Limited supply until I get some more of those in the pastures grown out.

I used something in a recipe tonight for the first time that I absolutely love and must share!
There is a compound called sodium citrate. It's the natural result of mixing citric acid [think lemon juice] and sodium bicarbonate [baking soda]. The reaction forms a salt called sodium citrate. [you can even make it at home]
IT IS A GAME CHANGER.

It acts as a natural emulsifier for fats and liquids. You can make the PERFECT cheese sauce with just three things. [just one application for the stuff].

Half to three quarters a cup of milk. 1 to 2 teaspoons of sodium citrate. 6 to 8 ounces of any cheese. Heat it while stirring and that's it! no clumps, no grainy texture, no flour, no curdling, no breaking. None of that!

I can't tell you how excited I am to discover this. No need for 'cream of' soups, Velveeta like cheeses, extra chemicals or BS... You can get the exact velvet smooth texture with this. I made the best broccoli mac and cheese I've ever had, tonight.

I bought the sodium citrate on Amazon for less than $10 for 14 ounces. However, I'm so excited about this stuff that I will absolutely give you some at the shop if you ask for it [for free]. I'll bag some up if anyone is interested. Just ask. That's how amazed I am.

I got the hamburger patties in from the last steer I had processed. They are third pound patties that are just SO easy to work with on the grill. Waxed paper between patties. I also have hamburger buns from Ozark Natural Breads and fresh garden lettuce from Ashley.

Fresh spring chickens in the cooler. We butchered this afternoon. This group are great grilling or smoking size. 4-5lbs. You will be hard pressed to find fresher or better chicken. All natural, pasture raised in movable coops. $4 per pound. They go fast. Our regulars love them.
