Another beautiful cow from Amlaw Family Farm. 3/4 of this cow will be going to animal shares, but we’ll be keeping the last 1/4 for the case this weekend.

We’ve been working with Bernie Amlaw for over 12 years now. I could not think of a better example of what a compassionate and endlessly knowledgeable farmer is. He has spent his life raising everything from chickens and turkeys to cows and horses. His care for his animals is second to none, as is the quality he produces.

His farm is an incredible place where all of the animals co mingle at the top of a mountain. There is very little fencing, mostly just along the perimeters of the property, and when you drive up it is not uncommon to be greeted by a tribe of goats, a flock of lambs, a few mischievous piglets, and a lone tom checking to make sure the flocks are safe. It truly is one of my favorite places to go in all of New England.

Not as exciting as some of the other lunches we’ve done, but it’s a very busy day, and we had to keep things simple. Regardless, this was still incredibly delicious and satisfying. Who doesn’t love steak and eggs?

It’s looking like it’s going to be a beautiful 60° Saturday for the first farmers market of the year.

We are fully stocked up for Memorial Day weekend. We’ve got all of our usual stuff, and quite a few fun things like veal loin chops, rack of venison, local beef, and more.

If you’re planning to grill this weekend, we’ve got you covered. And as Kris mentioned: don’t forget that Veterans, active military, first responders, etc always get 10% off. Just remind us at the register.

After all the rain this week, we have been blessed with an absolutely gorgeous spring Saturday.

The cases are loaded up with everything you need for grilling: local beef, pork, lamb, sausages, hot dogs and more. We’re also running a few sales today on prime NY sirloin, boneless pork chops and a few other favorites.

The “Poitrine Roll”- what we call a trimmed and rolled beef belly.

This is hands down one of my favorite things to do with beef. Perfect for braising, smoking, or roasting. As it cooks, the layers of meat essentially confit in the fat, leaving you with something incredibly rich, tender, and melt-in-your-mouth.

Honestly… it might even edge out brisket when done right. And that’s coming from a brisket-loving Texan.

These came off a beautiful local cow for one of our share customers. It isn’t something we have in stock often, but if you ever seen one I highly recommend giving it a shot, especially as we get into smoking season

We’re officially into grilling season (not that snow and cold ever stop me 😂)

Prime NY strip is one of my go-to cuts for the grill. Great marbling, cooks beautifully, crowd pleaser, and just hard to beat in general.

Simple salt, hot fire, and you’re in business. Pro tip: add pepper at the end so it doesn’t burn and turn bitter.

🐖 Full pig breakdown sped up. Sound on to hear me talking through what I’m doing and what all the cuts are.

This pig is going out as an animal share, so some of the ways I made certain cuts reflect what the customer wanted, like taking the baby backs off of the rib chops. Whenever a customer gets a share, they get full control of exactly how everything is cut and prepared for them.

What isn’t shown in this video are things like pulling the jowl, cutting each section into chops/roasts/etc and doing their ground pork. I did post a video a few days ago where you can see every cut this customer ended up with, but not me actually cutting them. We still have plenty of animal shares to get through though, so I’ll try to get some of the later stages up soon as well.

This was next level delicious 🤤

On Saturdays I make lunch for the guys. Today we decided to go for truffle pasta. Super simple, and outrageously good.

• Urbani Truffles USA White Truffle & Porcini sauce
• Rustichella d'Abruzzo Farfalloni
• Locatelli Cheese Pecorino Romano
• Pio Tosini 22 month prosciutto
• Pasta water
• Parsley
• Black pepper

That’s it. Oh, and a touch of oil to brown the diced prosciutto. Shout out to Provisions International for supplying the majority of what made this outstanding lunch. I’ll be dreaming about this one tonight 😅
