Sweet Potato Pie For The Holidays

Ingredients Edit and Save
Original recipe makes 1 - 9 inch pie Change Servings

1 (1 pound) sweet potato
1/2 cup butter, softened
1 cup white sugar
1/2 cup milk
2 eggs
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 (9 inch) unbaked pie crust

Directions
Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.
Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla.
Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.
Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean.
Pie will puff up like a souffle, and then will sink down as it cools.

Squash Blossoms at JAW'S PRODUCE
Battered Squash Blossoms
(With or Without Stuffing)
Batter:
1 cup flour
1/2 cup cornstarch
1/2 teaspoon salt
1 cup fat-free chilled milk, beer or water
Stuffing:
1/4 cup ricotta cheese
1 garlic clove, minced or pressed
1/4 teaspoon each salt and pepper
2 tablespoon mushrooms, finely chopped
1 tablespoons fresh basil or parsley, minced
16 large squash blossoms, washed
Canola oil for frying
1. Prepare the batter first. Sift together dry ingredients, then whisk in milk, beer or cold water until smooth. Cover and set in the refrigerator for 30 minutes. Leftover batter can be stored for up to two days. If it is too thick after refrigeration, add a few drops of water to return to original consistency.
2. Meanwhile, prepare the stuffing. In a bowl combine the ricotta cheese, garlic, salt, pepper, mushrooms and basil. Open the blossoms and spoon about one 1/2 teaspoon of the mixture into the center of each. Avoid overfilling the blossoms. Twist the top of each blossom together to close. Place on a baking sheet and refrigerate for 15 minutes.
3. Pour the oil into a skillet to a depth of 1/2 inch. Heat over high heat until a small cube of bread dropped into the oil turns golden brown within seconds.
4. Briefly dip each stuffed blossom into the batter, then carefully slip into the hot oil. Cook until golden on all sides, about three minutes total cooking time. Add only as many blossoms at a time as will fit comfortably in the skillet. Transfer with a slotted utensil to paper towels to drain briefly.
5. Sprinkle with salt, if desired and serve immediately.
NOTE: In place of the cheese-mushroom stuffing, try another of your favorite bread or meat stuffings.

The cholesterol-lowering ability of steamed mustard greens is second only to steamed collard greens and steamed kale in a recent study of calciferous vegetables and their ability to bind bile acids in the digestive tract. When bile acid binding takes place, it is easier for the bile acids to be excreted from the body. Since bile acids are made from cholesterol, the net impact of this bile acid binding is a lowering of the body's cholesterol level. It's worth noting that steamed mustard greens (and all steamed forms of the calciferous vegetables) show much greater bile acid binding ability than raw mustard greens.

Mustard Greens Recipe
Have you ever tried mustard greens? Related to kale, cabbage, and collard greens, they are the peppery leafy greens of the mustard plant and are used frequently in Chinese, Japanese, and Indian cooking. I find them less bitter than kale or collard greens, and more peppery, like arugula. Just one taste of a raw leaf and you’ll know it came from a mustard plant. Cooked, they taste a lot like spinach, but with more body. I like them with a dash of dark sesame oil, but you could easily just cook them up with a little garlic and olive oil.
Ingredients
⦁ 1/2 cup thinly sliced onions
⦁ 2 cloves garlic, minced
⦁ 1 Tbsp. olive oil
⦁ 1 pound mustard greens, washed and torn into large pieces
⦁ 2 to 3 Tbsp. chicken broth or vegetable broth (vegetarian option)
⦁ 1/4 teaspoon salt
⦁ 1/4 teaspoon pepper
⦁ 1/4 teaspoon dark sesame oil
Method
1 In a large sauté pan, sauté onions in olive oil over medium heat until the onions begin to brown and caramelize, about 5 to 10 minutes. Add the minced garlic and cook a minute more, until fragrant.
2 Add the mustard greens and broth and cook until the mustard greens are just barely wilted. Toss with sesame oil. Season with salt and pepper.
Serves 4

Smoked Ham Hocks w/ Pinto Beans
Ingredients
4 Cup. dry pinto beans
1.25 lb. or 2 smoked ham hocks
1 medium onion diced
1.75 Cup. diced celery
1 to 2 cloves minced garlic
8 Cup. water

Optional:
Ground black pepper (to taste)
1 tsp. liquid smoke
2 tsp. Lawry's garlic salt
Sliced pepperoncini's & /or juice to taste
Minutes to Prepare: 15
Minutes to Cook: 540
Number of Servings: 10
Directions
Place all ingredients into large slow cooker. Cook on high for 6 hours (stirring occasionally if you are around) or until ham hocks come apart. Remove skin, bones, & visible fat from ham and discard. Serve hot.
